Finger lime, also known as finger lemon, finger orange, Australian finger orange, lemon caviar, is a relatively rare citrus plant native to the subtropical coastal regions of Australia.

grows in lowland subtropical rainforests in the coastal areas along the border between Queensland and New South Wales, Australia. The fruit is cylindrical, 4-8 cm long, slightly curved and resembles a finger (hence the name). Each fruit weighs about 30 grams.

Still one of the most flavorful products, the finger lime is named “caviar lime” because its interior consists of small juicy spheres (vesicles) that are hard on the outside and soft on the inside. Like caviar, they burst in the mouth and impress with their unexpected flavo

Finger oranges come in a variety of colors, including green, yellow, orange, red, purple, black and brown. In addition to their unique shape, finger oranges are completely different on the inside.

It is used to make jams and pickles, while its dried rind is used as a spice that adds flavor to many foods. The commercialization of finger limes began in the 1990s with specialized jams made from the wild fruit. By 2000, finger limes were sold to restaurants around the world, with demand growing in Europe, the Americas and Asia.
